Chilli pork and bean casserole
A perfect Sunday dinner recipe
 

4 large pork fillets, cut into 4cm cubes

Olive oil

1 onion, chopped

2 clove garlic, crushed

2 carrots, chopped

1 red chilli, finely chopped

2 chicken stock cubes, dissolved in 1 cup hot water

2 tsp chilli powder

1 tsp dried oregano

2 tins red kidney beans, drained and rinsed

2 cup tinned pinto beans, drained and rinsed

80g tomato puree

800g tinned tomatoes, chopped

85g tomato paste

Preheat the oven to 180°C or gas mark 5

Heat the oil in an ovenproof pot and cook the pork cubes for about 5 minutes. Add the onion and garlic and gently cook for five minutes or until soft.

Pour in the stock cube and add the carrots, chilli powder, oregano, fresh chilli, pork, beans, tomato puree, chopped tomatoes and tomato paste. Bring to the boil and allow to simmer for five minutes.

Place the pot into the oven for 1 ½ - 2 hours. Ensure it is piping hot in the middle before serving.
