Chocolate and banana muffins

Chocolate and banana muffins
These delicious muffins make for a tasty snack or can be served as a special Saturday morning breakfast treat. 

2 ripe bananas
2 eggs
80g soft margarine or butter
70g dark brown sugar (or caster sugar)
150g plain flour
2 tsp baking powder
3 tbsp chocolate spread (optional) or handful of dark chocolate chips

Preheat the oven to 180°C/350°F/Gas 4.

In a bowl, beat margarine or butter and sugar until creamy.

Add eggs and mashed bananas with a fork.

Add the flour and baking powder and mix.

If using chocolate chips, mix them in now. 

Grease a muffin pan or place muffin cases on a baking tray.

If using chocolate spread, half fill each muffin case with mixture then top with a 1/2 teaspoon of chocolate spread and finally top another spoon of mixture. Bake for 20 minutes.

Remove from oven and allow to cool before turning out.

We tested this as a gluten free recipe and it works really well.  Replace the flour and baking powder with gluten free options and follow the exact same instructions.  Ensure your chocolate spread and chocolate drops are gluten free also.
