Christmas Red Velvet Cupcakes
Stunning red velvet cupcakes with a Christmas feel.

100g butter

200g caster sugar

2 eggs, beaten

2 tsp vanilla extract

1 heaped tbsp red food colouring

250g plain flour

2 tsp baking powder

½ tsp bicarbonate soda

2 tbsp cocoa powder

175ml buttermilk

1 tsp cider vinegar

Cream cheese icing

50g butter

300g cream cheese

100g icing sugar

1 tsp vanilla extract

Crushed candy canes, to decorate

Line a 12 hole baking tray with paper cases.

Preheat oven to 170°C/325°F/Gas 3

Cream butter and caster sugar together.

Add beaten eggs, vanilla extract and red food colouring and stir well.

Sift in plain flour, baking powder, bicarbonate soda and cocoa powder.

Add buttermilk and cider vinegar and combine.

Spoon the mixture into the paper cases and bake in the preheated oven for 20 minutes. Leave to cool.

To prepare the icing, whisk together the butter, cream cheese, icing sugar and vanilla extract.

Once the cupcakes have cooled spread the cream cheese icing on top with a palette knife.

Scatter some crushed candy canes on top of each cupcake.
