Croissant Signora
Make Mum happy with a delightful breakfast, easy to make and just a bit different.

8 slices Italian ham

125g Mozzarella cheese, sliced

4 all-butter croissants

Fresh coriander, roughly torn

1-2 tbsp rapeseed oil, for frying

4 eggs

Preheat the oven to 140°C / 275°F / Gas mark 1. 

Line a baking tray with greaseproof paper and set aside.

Cut the ham and cheese slices diagonally in half. Cut each croissant in half, then line each one with some of the cheese and ham and a little black pepper and some coriander.

Press together to seal.

Transfer to baking tray and pop in the oven to keep warm.

Heat the oil in the pan and fry the eggs, seasoned with a little salt and pepper.

Serve the croissants added with the fried egg.
