A classic dessert that will never go out of style
5 egg yolks
300ml milk
300ml single cream
2tbsp caster sugar
1 cinnamon stick or 1 vanilla pod, slit lengthways
Put the egg yolks in a bowl and beat them lightly with a whisk.
Pour the sugar, the milk and the cream into a pan. Add your flavouring of choice. Gently bring the mixture up to the boil. Pour onto the egg yolks and whisk until thoroughly blended.
Put the egg mixture back into the pan and cook on low heat. Stir non-stop until it becomes thick enough to coat the back of the spoon. Immediately take the pan off the heat and strain above a bowl.
