600g Keogh’s Kerr’s Pink Potatoes
2-3 spring onions (chopped finely)
25g butter
75ml milk
Salt & pepper to taste
Peel and rinse the potatoes and cut into even sized pieces.
Place the potatoes in a saucepan and cover with water.
Bring to the boil and then reduce to a simmer for 20 mins or until cooked.
Once soft, drain the potatoes and mash.
Heat the butter and milk in a separate pot and add to the mashed potato.
Continue to mash the potatoes until smooth and lump free.
Stir in the spring onions and season with salt & pepper to taste.
