Easy peasy mac and cheesy
This recipe is fool proof and will make your children smile and rub their tummies for more. You can sneak in some tomatoes if you like as well.
 

200g dry macaroni pasta

60g butter

1 chopped onion

2 chopped rashers or 100g lardons

30g plain flour

600ml semi-skimmed milk

2 tsp mixed herbs

200g grated cheddar cheese

Preheat the oven to 180°C / 350°F / Gas mark 4.

Grease a 1.5 litre ovenproof dish.

Cook the macaroni in boiling water until tender, about 8-10 minutes then drain.

In a large pan, heat the butter then add onion and bacon.

Stir over medium heat for about 5 minutes. 

Add the flour and stir over low heat for 1 minute.

Remove from heat then gradually add the milk, stirring until smooth.

Return to medium heat and cook for 5 minutes stirring until mixture comes to the boil and thickens.

Simmer over low heat for 1 minute.

Remove from heat. Season with herbs, salt and pepper.

Add the drained macaroni and half of the grated cheese.

Stir, then spoon into the prepared dish.

Sprinkle with remaining cheese and bake for around 25 minutes or until lightly golden.

Serve once cooled slightly.
