Enchiladas

Sometimes we just want dinner fast and using a jar of enchilada sauce will mean you can have it on the table in 30 minutes.
500g beef mince
240g cheese, grated
6 tortillas
2 large jars enchilada sauce
2 tbsp vegetable oil
100g button mushrooms
1 onion, sliced
1 courgette, grated finely
1 carrot, grated finely
Preheat the oven to 180°C or gas mark 4.
Heat the oil in a frying pan and gently fry the beef for 5 minutes until brown. Add the onion, mushrooms, courgette and carrot. Once the vegetables are cooked you can add one jar of enchilada sauce. Leave to cook for a further 2 – 3 minutes.
Equally divide the mince into each tortilla, roll and place in the ovenproof dish with the fold side down.
Pour the other jar of sauce over the rolls and sprinkle with cheese before putting in the oven for 20 minutes.
