Fresh strawberry muffins

Delicious fresh plump strawberries are the star ingredient in this ideal snack or breakfast treat.
75g porridge oats
225ml buttermilk
100g plain flour
1 tsp baking powder
½ tsp bicarbonate of soda
1 tsp salt
1 egg
4 tbsp vegetable oil
175g light brown soft sugar
1 tsp vanilla
175g fresh strawberries, hulled and chopped
Preheat the oven to 190°C / 375°F / Gas mark 5.
Line a muffin tin with paper cases.
Combine the oats and buttermilk in a small bowl and let stand 5 minutes.
In a medium bowl, combine flour, baking powder, bicarbonate of soda and salt then set aside.
In a large bowl, beat together the egg, oil, brown sugar and vanilla.
Stir in the oat mixture.
Add in the flour mixture, just until moistened.
Pop in the strawberries and mix through gently.
Fill the muffin cases 2/3 to 3/4 full.
Bake for 15 to 20 minutes, or until a cocktail stick inserted into the centre comes out clean.
Can be eaten warm or cold.
