Fruit cookies
 
Easy to make, fast to go. These fruit cookies are a wholesome choice and simply delicious.

200g butter

175g soft brown sugar

2 tbsp marmalade

2 tsp ground mixed spice

1 tsp ground cinnamon

1 tsp ground ginger

175g porridge oats

200g self-raising flour, plus extra for dusting

2 tsp baking powder

175g mixed dried fruits

100g walnuts, chopped

Preheat the oven to 160°C / 325°F / Gas mark 3.

Line a baking tray with greaseproof paper and set aside.

In a bowl, mix the butter and sugar until creamy, then set aside.

Mix the marmalade with 2 tablespoons of boiling water.

Stir into the butter and sugar mix, then add the spices, oats, flour and baking powder.

Mix in the fruit and nuts.

Dust your hands and surface with flour and roll the dough into a long sausage shape.

Cut into about 20 discs.

Place on the baking tray, spaced out.

Bake for about 25 minutes until golden brown.
