Gluten free french toast with crispy bacon

2 large eggs, beaten in a shallow dish or deep plate



2 slices of gluten free fresh white bread, crusts removed

1 tablespoon oil for frying (sunflower or olive oil)

4 rashers of streaky bacon

Maple syrup to serve (optional)

Pre-heat the oven to 130°C/ 250°F/gas mark 1 or 2. Season the beaten egg.

Cut the bread diagonally in half. Immerse both sides of the bread in the beaten egg until fully coated.

Grill the bacon until crispy. Place in the oven to keep warm.

Fry the egg-soaked bread in a frying pan and fry until golden brown on both sides.

Arrange two slices of French toast and two rashers of bacon on each plate. Sprinkle with maple syrup and serve immediately.
