Harissa chicken with chickpea salad
This harissa chicken salad is low in fat and high in fibre so it's the perfect healthy dinner.

250g punnet cherry tomatoes, halved

1/2 small red onion, chopped

400g can chickpeas, drained

Small bunch parsley, roughly chopped

Juice of 1 lemon

Salt and pepper to season

2 skinless chicken breasts, halved lengthways

1 tbsp harissa

Natural yoghurt/ pitta bread to serve

Mix the tomatoes, onion and chickpeas together and stir through the parsley and lemon juice.

Add salt and pepper to season.

Coat the chicken with the harissa and add to a frying pan brushed with oil.

Cook the chicken for 3-4 minutes on each side until cooked through.

Mix the chicken with the salad and serve with natural yoghurt and pitta bread.
