Hearty lentil stew

Hearty lentil stew
This stew is perfect for those cold days and is extremely easy to make.
 

1 packet of bacon lardons

2 red onions, peeled and chopped

2 carrots chopped

3 celery sticks, chopped

2 cloves garlic, sliced

2 tbsp olive oil

½ tsp dried thyme

½ dried chilli, crushed

200g dried lentils

1 vegetable stock cube

Seat salt and pepper to taste

Place a large saucepan (with a lid) on a medium heat. Add the olive oil and the bacon.

Fry slowly until the bacon has started to go crispy, then add the dried thyme, chilli, onion, carrot, celery and garlic.

Cook gently with the lid on for about 15 minutes, until all the vegetables are soft, then add the lentils and 1 litre of water & vegetable stock.

Bring to the boil then simmer until the lentils are soft. If the soup's a little thick add some more water.

Bring back to the boil and simmer for another 10 minutes, then taste and season with sea salt and freshly ground black pepper.

Serve while hot with crusty bread.
