Honey muesli with raspberries
Make your own muesli for a healthy start to the day

125ml freshly squeezed orange juice

225g porridge oats

300ml cold water

225ml natural low-fat yoghurt

Finely grated zest of 1 lemon

3 tbsp clear honey

2 red or pink dessert apples (e.g. pink lady)

2x 125g punnets raspberries

50g hazelnuts lightly toasted and coarsely chopped

Single cream, to serve (optional)

Combine orange juice, oats and cold water in a bowl.

Cover the bowl wth cling film and place in the fridge overnight.

The next morning, mix in the yoghurt, lemon zest and the honey.

Chop, quarter and core the apples, grate them in and mix well.

Tranfer into bowls and top with raspberries, toasted hazelnuts and a little cream or yoghurt if desired.
