Kale & caramelised onion toasted cheese
A really simple way to include hearty, healthy kale in your child's sandwich.

4 kale leaves
2 tsps olive oil
½ red onion, diced
4 slices of Johnston Mooney & O'Brien white bread
Parmesan, grated
2 handfuls of grated cheddar
Salt and pepper
Tomato (optional)

Cook kale in a saucepan of simmering water for 4-5mins until leaves are bright green.

In a frying pan, cook the onions over a medium heat with the oil and a sprinkling of salt and pepper. Cook until the onion is soft and browned, stirring regularly.

Sprinkle a tablespoon of Parmesan onto one of the slices of bread. Add 2 of the kale leaves, half the onion mixture, then the tomato and a handful of cheddar. Top with another slice of bread. Repeat with the remaining ingredients.

Grill until both sides of the sandwiches are golden brown and the cheese is melted.
