Marinated beetroot with goat's cheese
 
This fresh beetroot salad with warmed goats cheese is so easy and makes a dinner party impression.

6 tbsp olive oil, plus extra for greasing

3 tbsp red wine vinegar

1 tsp sugar

1 tsp thyme leaves

4 raw beetroot, peeled and chopped

2 x 100g goat's cheese, sliced

4 handfuls rocket

Mix the oil, vinegar, sugar and thyme in a shallow dish and season well.

Add the beetroot and marinate for at least 1 hour or overnight, ideally.

Heat grill to high.

Line a baking tray with greaseproof paper with a little olive oil and grill for 2-3 minutes until golden and melting.

Lift the beetroot out of the marinade, reserving it.

Divide into portions between 4 plates.

Top with the rocket, goat’s cheese and drizzle with the marinade and serve.
