Marzipan chocolate bites
Satisfy your sweet tooth with these almond flavoured marzipan bites. 

150g golden caster sugar

300g icing sugar

300g almonds, ground

1 tsp vanilla extract

2 eggs, beaten

1 tsp orange juice

250g dark chocolate

Line a baking tray with parchment paper.

In a mixing bowl, combine the sugar with the icing sugar. 

Add the almonds and vanilla and combine well.

Add the eggs and orange juice. Mix together well. Use your hands to ensure everything is properly combined.

Turn the mixture out onto a clean surface and knead with your hands.

Roll into a large ball, return to bowl and cover with cling film. Place in the fridge for 2 hours.

Remove from fridge and turn out onto a clean surface. Roughly roll it flat to about 1½ inches thick

Use a knife to cut about 15 sections from the dough. Roll each section into a ball. Set aside.

In the meantime, melt the chocolate in a bowl placed over a pot of boiling water.

When melted, dip the marzipan balls into the chocolate and line them onto the prepared baking tray.

Leave them to set before serving.
