Meatball sliders

These sliders are a great way to serve meatballs and the tomato sauce really adds to their flavour.
4 tbsp olive oil, 2tbsp for the sliders and 2 tbsp for the sauce
½ onion, finely sliced
1 garlic clove, minced
500g minced beef
2 tbsp rosemary
1 egg, beaten
Salt, to season
6 large tomatoes, chopped
1 tbsp tomato paste
50g mozzarella cheese, for garnishing
4 ciabattas, sliced
Heat 2 tbsp of the oil in a frying pan on a medium temperature and add the onion and garlic. Cook for about 3 minutes.
Transfer to a medium bowl and allow to cool completely before adding the mince to the bowl.
Spoon in the rosemary and give it a good mix to ensure everything is combined. Add the egg and season with the salt.
Use your hands to make about 6 large meatballs with the mixture. Place on a clean plate and allow to chill in the fridge.
Add the rest of the oil to the frying pan over a medium temperature. Toss in the tomatoes and tomato paste. Season with salt.
Add your meatballs to the frying pan and cook for about 10 minutes until cooked through.
Spoon a meatball with some sauce onto each ciabatta and garnish with the cheese.
