Mummy Cooks' Meatballs
These meatballs are perfect for filling a lunchbox.Prepare them the night before, and cook off in the morning to fill your Food Flask alongside our delicious Hidden Veg Pasta Sauce. This recipe is also great doubled and teamed with some pasta for a fantastic mid-week family meal! 
 

1 onion, finely chopped
1 egg
1 red pepper finely chopped
500g beef mince
½ tbsp oregano
½ tbsp ground cumin
½ tbsp paprika
1 tsp mild chili powder
1 tbsp olive oil

In a large bowl combine the pepper, onion and spices. Add in the mince and the egg, and mix thoroughly.

With your hands, roll the mixture into meatballs.

Heat a large pan with some olive oil, add the meat balls and allow to brown for about a minute before reducing the heat and cooking for 4 minutes.

Turn up the heat, and turn over the meatballs; allow to brown on the opposite side for about a minute before, again, turning down the heat and cooking for another 4-6 minutes until cooked through.

Serve and enjoy with our Hidden Veg Sauce.
