50g ready-to-eat dried apricots, chopped
50g soft butter
50g light brown sugar
2 tbsp condensed milk
50g rolled oats
85g self-raising flour
Preheat oven to 150°C/300°F/gas 2. Line a baking tray with greaseproof paper.
Place the butter and sugar in a mixing bowl and beat well with a hand held mixer.
Tip in the condensed milk, beat well, then add the oats and apricots, and mix well again.
Lastly, add the flour and mix until fully combined.
Mix together the dough and divide into 6 even balls, pressing gently on top of each with the back of a spoon to flatten.
Place in the oven to bake for 25-30 mins until golden around the edges.
Leave to cool on the tray. Store in an airtight container for up to 3 days.
