Orange Spinach Salad with Almond Vinaigrette
This zesty orange salad makes the perfect starter

Dressing:

15ml grainy dijon mustard

30ml honey

A splash of pure almond extract

Cracked black pepper to taste

100ml rapeseed oil

75ml rice vinegar

Salad:

3 bunches baby spinach leaves, washed and patted dried

1 small red onion, sliced very thin

1 cucumber, chopped coarsely with the peel on

3 large oranges, peeled, seeded and cut into sections

200g slivered toasted almonds, toasted

In a small bowl whisk grainy dijon mustard, honey, almond extract and pepper until well combined.

Add rapeseed oil in a thin stream, whisking constantly, until incorporated. 

Add the vinegar slowly, whisking until dressing emulsifies.

Set dressing aside

In a large bowl toss spinach, onion, cucumber, oranges and almonds.

Dress the salad with the vinaigrette and toss to combine.

Serve.
