Pan fried chicken breasts with peach salsa

Simple, tasty chicken supper with a fruity peach topping.
4 chicken breasts
2 tbsp olive oil
4 peaches, chopped finely
1 red onion, diced
1 red pepper, diced
1 handful of mint
1 red chilli
1 lime, juiced
Salt and black pepper
Mix the peaches, red onion, red pepper, mint, chilli, lime juice, salt and pepper in a bowl.
Leave to rest and infuse in the fridge for 30 mins.
Heat olive oil in a frying pan, fry the chicken breasts on both sides until cooked.
Serve each breast on a plate with peach salsa spooned on top.
