Parkin cake
This delicious traditional North of England cake is made with black treacle and is perfectly sticky and chewy. Absolutely delicious.
 

80g black treacle

250g honey

110g unsalted butter

150g dark brown sugar

120g all-purpose flour

45g oatmeal

1 tsp baking powder

4 tsp ginger

2 tsp freshly ground nutmeg

Pinch salt

1 egg, beaten

1 tbsp milk

Preheat the oven to 140°C / 275°F / Gas Mark 1. Line a baking tray with parchment paper.

Combine the treacle, honey, butter and sugar together in a saucepan over a medium temperature until melted.

While that is melting combine the flour oatmeal, baking powder, ginger, nutmeg and salt in another bowl. 

When ready, pour the treacle and honey mix over the dry ingredients.

Mix it well before beating in the egg and adding the milk.  

Pour the sticky mix into the baking tray and smooth down the top with the back of a spoon.

Place in the oven for 60 minutes.

Transfer to a wire rack to cool before cutting into squares.
