Pork and quinoa meatballs
Delicious lightly spiced pork meatballs with added quinoa.

85g quinoa, washed

450g minced pork

1 onion, finely diced

3 garlic cloves, minced

2 large eggs

½ tsp cayenne pepper

½ tsp paprika

½ tsp dried oregano

½ tsp dried parsley

Salt and black pepper

Preheat the oven to 200°C/400°F/Gas mark 6.

Line a baking tray with baking parchment.

Place the quinoa in a saucepan with double the water and bring to the boil.

Reduce the heat and to low and cook until all the water has been asborbed (around 15 mins)

Transfer to a mixing bowl and chill.

Add in the pork mince and spices. Season.

Shape in to golf ball sized pieces.

Place them on to the lined baking tray.

Transfer to the oven for around 20 mins
