Rhubarb, mint and limeade
Refreshing fruity drink. Great for summer B.B.Q's.

500g rhubarb, discard leaves as they are toxic & chop stems in to 5cm pieces

350g strawberries, cut in half

1l water

2 limes, juiced

125g granulated sugar

20 mint leaves

Extra slices of rhubarb, lime, strawberries & sprigs of mint for serving

Place the rhubarb, strawberries, granulated sugar and water in to a saucepan.

Bring to the boil and then lower the temperature to a medium heat.

Add the lime juice and mint leaves, continue cooking for another 20 mins, stirring occasionally.

Leave to cool before pouring the lemonade through a sieve placed over a bowl to catch the cooked fruit.

Chill the lemonade in the fridge.

Once chilled, serve in glasses with the extra slices of fresh rhubarb, lime, strawberries & mint.
