Sloppy joes
Easy to make, fun to eat. These sloppy joe sandwich pizzas are a triumph.

500g pack lean beef mince

350g homemade tomato sauce

1 chilli, de-seeded, finely chopped (optional)

4 x ciabatta

2 x 125g balls mozzarella, drained and torn

50g cheddar cheese, grated (as garnish)

Heat a large frying pan and brown the mince.

Pour in the tomato sauce and chilli if using and leave to bubble, uncovered, for 15 minutes until thickened.

Taste and season if required.

Heat the grill. Cut the ciabatta in half lengthways.

Place the bread, cut-side up, on a baking tray and grill for 2-3 minutes until lightly toasted.

Remove from the grill and divide the mince between the slices.

Scatter over the torn pieces of mozzarella.

Grill for 3-4 minutes more, until the cheese is bubbling and golden.

Scatter with the cheddar and serve with a salad, if you like.
