Stuffed peppers
Stuffed peppers make a great lunch and the beef filling really helps to fill you up.

200g mince beef

2 tbsp olive oil

1 onion, minced

2 carrot, chopped

6 cherry tomatoes, cut

1 tsp tomato paste

3 button mushrooms, cut

1 tsp coriander

3 large peppers

50g parmesan cheese, grated

Preheat oven to 190°C/375°F/gas mark 5. Line your baking tray

Heat your oil in a saucepan on a medium temperature and spoon in your mince. Cook for 10 minutes until brown. Add in the onion and mix.

Add in the carrot, tomatoes, tomato paste, mushrooms and coriander. Cook for another minute until tender.

Cut your peppers in half, scoop out the middle and line them on the baking tray.

Spoon your beef mix into the six half peppers and sprinkle the cheese on top.

Place in the centre of the oven for 15 minutes until the cheese is melted.

Serve straight away.
