Vietnamese beef salad

This sweet and sour beef salad is fresh and full of delicious flavours.
60ml fish sauce, plus 4 tbsp for the sauce
1 tbsp fresh lime juice
4 tbsp brown sugar, keep 2 for the sauce
4 cloves garlic, minced
1 Thai chilli, sliced
1 1/2 lbs. flank steak
2 tbsp lime juice

Garlic paste to taste
125ml water
1 head lettuce, washed and torn
Half cucumber, sliced
1 red onion, sliced
4 tomatoes, sliced
To make the marinade combine the fish sauce, lime juice, 2 tbsp sugar, crushed garlic and Thai chilli together in a bowl.
Stir until the sugar is fully dissolved.
Add the steak to the bowl and use your hands to coat it in the marinade.
Cover with clingfilm and place in the fridge overnight.
Place the beef piece on a wire rack and place under the grill on a high heat.
While the beef is cooking you can make the nouc cham. Combine your lime juice, 2 tbsp of brown sugar, 4 tbsp fish sauce, garlic cloves, garlic paste and water together and whisk until the sugar is dissolved.
Once your beef is cooked you can assemble the salad. Fill four bowls with lettuce, cucumber, onion and tomatoes and top with the beef. Flavour the salad with the nouc cham.
