Ingredients:
200g white chocolate
5 tsp strong Lapsang souchong or oolong tea
3 tsp clear runny honey
To coat
Pistachio nuts, blitzed in a food processor
Cocoa powder
Icing sugar, dyed pink with food colouring
Put the chocolate into a bowl and melt in a bain-marie.
Add in the tea, teaspoon by teaspoon, without stirring too much.
Pour in the honey and mix with a spatula until the chocolate becomes smooth and shiny. Put in the refrigerator for about 20 minutes.
Shape the mixture into balls the size of a teaspoon and dust them with cocoa powder, blitzed pistachios or pink icing sugar. Place them on a serving dish and store them in the refrigerator until serving.
