If you're used to slinging your bag of potatoes in the fridge after returning from the weekly shop, you may want to reconsider this potentially harmful habit.

According to numerous emerging reports, the Food Safety Authority have issued advice on the correct storage of the public's favourite vegetable, and it doesn't involve refrigeration

Drawing attention to the issue on their website, the FSA begins by writing: "The most important food not to keep in the fridge are potatoes."

"When these are stored in the fridge, the starch in the potato is converted to sugar," they continue. "When baked or fried, these sugars combine with the amino acid asparagine and produce the chemical acrylamide, which is thought to be harmful."

 

As previous studies have established that this particular chemical has been linked to cancer, experts in the field recommend we steer clear of the fridge when storing our spuds and opt instead for a cool, dry place.
