Blackened fish with fresh green dressing
Smokey blacked fish with a creamy green salad and dressing go perfectly together for a delicious meal.
 

1 tsp paprika

1 tsp chilli powder

1 tsp cayenne pepper

1 tsp garlic powder

4 salmon fillets, skin on (or preferred fish)

3 tbsp olive oil

1 head romaine lettuce, leaves separated

6 radishes, trimmed and thinly sliced

2 large avocados, stoned and sliced

6 spring onions trimmed and finely sliced or red onion finely sliced

For the Dressing

3 tbsp buttermilk

1 tbsp olive oil

1 tbsp white wine vinegar

1 garlic clove, peeled and finely chopped

Handful of chives, snipped (optional)

Preheat the grill to high.

Use a large and flat plate then mix the paprika, chilli powder, cayenne pepper and garlic powder.

Drizzle the fish fillets with olive oil and then dredge through the spice mix on both sides.

Place on a grill tray and cook under the grill for 10 minutes until the skins are slightly charred and the fish is cooked all the way through.

Meanwhile, blitz the ingredients for the dressing in food processor or whisk together until smooth.

Season with salt and black pepper to taste.

Dress the salad leaves, radishes, avocados and spring onions with the dressing and serve with the blackened fish.
