Salmon with herb pasta

This is a lovely combination, packed with flavour and healthy ingredients. A certain menu addition.
4 Salmon darnes
1 lemon
2 tbsp olive oil
2 Cloves of garlic, sliced finely
60g mixed olives, halved (optional)
Handful fresh basil, roughly torn
350g dried pasta of choice
Thyme sprigs or basil to garnish
Preheat the oven to 180°C / 350°F / Gas mark 4.
Line a baking tray with greaseproof paper and set aside.
Place the salmon darnes individually onto kitchen foil.
Squeeze a little lemon juice over each one then seal.
Place the wrapped salmon darnes onto the baking tray and cook for 20 minutes.
In a large frying pan heat the olive oil and cook the garlic gently until tender, then add in the olives and roughly tear in the basil.
Let this simmer for 15 minutes.
Cook the pasta according to the instructions, drain and set aside.
Mix the pasta sauce in with the drained pasta and serve with the salmon darne on the top.
Garnish with a fresh thyme or basil.

This dish works well with the addiiton of a couple chopped tomatoes, deseeded and then added when cooking the garlic and olives.
