Blueberry pancakes
Blueberry pancakes are ideal for a leisurely breakfast. Just ensure to make enough batter as everyone will want seconds!

250g plain flour

½ tsp salt

3 tbsp sugar

2tsp baking powder

250ml milk

2 eggs, beaten

50g, plus an extra knob for the frying pan

100g blueberries

To serve:

80ml maple syrup

25g butter

Sift the flour, salt, sugar and baking powder into a mixing bowl. In a jug, mix together the milk, eggs and melted butter.

Pour the liquid into the dry ingredients and whisk together. Toss in the blueberries and mix.

Heat a solid frying pan over a medium heat, add a small knob of butter and allow to melt.

Spoon in batter to make a 18cm round pancake. Flip the pancake when bubbles appear on the top.

Keep the pancakes warm in the oven while you make the whole batch.

Serve with maple syrup that has been warmed with a knob of butter in a saucepan.
