Butterscotch cookies

These delectable butterscotch cookies with puffed rice cereal are absolutely lovely.
100g unsalted butter, softened, plus extra for the baking sheet
100g light soft brown sugar
2 tbsp golden syrup
175g self-raising flour
25g puffed rice cereal
Dark chocolate chips, for decoration
Preheat the oven to 160°C / 325°F / Gas mark 3.
Line a baking tray with greaseproof paper lightly buttered and set aside.
In a large bowl, beat together the butter, sugar and golden syrup until smooth.
Sift in the flour and mix together, then add the puffed rice cereal and mix gently.
Roll into walnut sized balls and place well-spaced, on the baking tray.
Decorate each ball with a few chocolate chips.
Bake for 15-20 minutes until golden.
Leave on the baking sheet for 1 minute before removing to a wire rack to cool.
