Colcannon
1kg potatoes, well scrubbed, cut in half if large
100g butter
140g sliced back bacon, finely chopped
1 small Savoy cabbage (or kale) , finely shredded
150ml double cream
Add the potatoes to a large saucepan of water. Bring to the boil, then simmer for 15-20 mins until tender.
Meanwhile, heat a quarter of the butter iin a saucepan, then fry the bacon and half of the cabbage for 5 minutes. Remove from the heat and set aside. Drain potatoes in a colander and peel while still hot.
Mash potatoes until creamy and heat cream with the rest of the butter and then mix with the potato. Add the bacon and cabbage and season to taste.
