Farm fresh roast chicken and stuffing

Make Mum a delicious roast chicken with all the trimmings on her special day
1 tbsp olive oil
1 large onion, thinly sliced
2 garlic cloves, chopped
2 slices, bread
20g flat-leaf parsley
Zest 1 lemon
1 x 1·5kg chicken
25g butter, softened
Irish potatoes, to serve
Mixed vegetables, to serve
Preheat the oven to 200°C / 400°F / Gas mark 6.
Heat the oil and fry the onion and garlic until softened.
Pour everything into a bowl.
Using a food processor, blitz bread with the parsley.
Add the onion and garlic mix, along with the lemon zest, and season with salt and pepper.
Spoon the stuffing into the chicken neck cavity, but allow air to flow while cooking.
Place in a roasting tray, layer over the butter and season generously with salt and pepper.
Add 110ml of water and roast for 1 hour 20 minutes. Insert a skewer into thickest part of thigh. It is cooked through when juices run clear.
Scatter the chicken with chopped parsley and leave to rest for 10 minutes, before carving.
Over the hob, cook the chicken juices and serve along with potatoes and vegetables.
