Quick to make and simply delicious is this cod and tomato based pasta dish.
275g pasta of choice
1 tsp olive oil
4 tomatoes, chopped
4 cod steaks
20g butter
1 green chilli, deseeded and finely sliced
1 tsp fresh lemon juice
In a pan, bring some salted water to boil.
Cook the pasta according to the instructions, drain and set aside.
Heat the olive oil in a pan and cook the tomatoes until starting to turn soft.
Season the cod steaks with some salt and pepper, melt the butter in a large frying pan and fry the steaks for four minutes on each side.
Add the chilli to the tomatoes and toss everything together along with a squeeze of fresh lemon juice before serving the cod over top.
