Fried rice with chorizo

Chorizo gives the rice a depth of flavour all the family will love.
1 tbsp olive oil
2 chorizo sausages, cubed
2 eggs, lightly beaten
600g cold cooked rice
2 tbsp light soy sauce
2 spring onions, sliced
80g petis pois
Heat the oil in a large frying pan over medium heat.
Add the chorizo and cook until it begins to colour and it is cooked through.
Remove the chorizo and crack the egg into the saucepan.
Lightly scramble the egg, allowing it to maintain consistency.
Add the rice, soy sauce, peas, spring onion and chorizo to the pan and toss to combine.
Serve immediately.
