Garlic chicken with green beans

Garlic chicken with green beans
A simple dish loaded with flavour and healthy ingredients.
 

4 x skinless chicken breasts

40g butter

2 cloves garlic, minced

Small handful tarragon leaves, finely chopped

1 tbsp wholegrain mustard

100g French beans, trimmed

Sprigs of fresh tarragon, to garnish

Preheat the oven to 190°C / 375°F / Gas mark 5.

Line a baking tray with greaseproof paper and set aside.

Make a few diagonal slashes in each chicken breast.

Mash together the butter, half the chopped tarragon, the garlic and some salt and pepper in a pestle and mortar until smooth.

Stuff this butter into the slashes of the chicken evenly.

Arrange the chicken breasts on the baking tray.

Bake for 20-25 minutes until the chicken is cooked through, with no pink showing.

Steam the green beans for 4-5 minutes until just tender.

Transfer to a mixing bowl and mix with the wholegrain mustard and some salt and pepper.

Serve everything with a garnish with a sprig of tarragon if you like and serve immediately.
