Roast citrus carrots

This versatile dish is simple to make and goes beautifully with your Christmas dinner.
1kg carrots, cut into batons (if they are small, keep the greens on)
50g marmalade
25g butter
1 heaped tsp, ground cumin
Using a large pan, put everything in and pour over 250ml water.
Simmer over a low heat for 20 minutes until the liquid has evaporated and the carrots are tender.
Turn them to coat in the sticky glaze. If they are still a little raw, add a splash of water and cook for a few minutes more.
Transfer to a serving platter and enjoy.
