Roasted cod with parma ham and peppers

Lots of delicious vegetables offset these parma ham wrapped cod fillets.
1 red pepper, deseeded and chopped
1 yellow pepper, deseeded and chopped
2 courgettes, sliced
6 cherry tomatoes, halved
1 red onion, roughly chopped
1 tbsp, olive oil
4 cod fillets
4 slices Parma ham
10g bread crumbs
10g Parmesan cheese
2 -3 tsp Balsamic vinegar
2 tbsp basil
Preheat the oven to 220°C / 425°F / Gas mark 7.
Line a baking tray with greaseproof paper and set aside.
Put the peppers, courgettes, cherry tomatoes and onion in the baking tray and drizzle with the olive oil.
Season with salt and plenty of ground black pepper, toss everything together.
Roast for 20 minutes.
Pat the fish dry with kitchen paper and season with black pepper.
Wrap each fillet with a slice of the parma ham.
Add the fish to the baking tray.
Before returning to the oven, mix the breadcrumbs with the cheese and basil then scatter over everything on the tray and bake for a further 15 minutes.
Drizzle with balsamic vinegar and serve.
