Salmon with roasted asparagus

Salmon with roasted asparagus
An easy light dish packed with flavour and goodness.

400g new potatoes, halved if large

2 tbsp olive oil

8 asparagus spears, trimmed and halved

10 cherry tomatoes

1 tbsp balsamic vinegar

140g (2 salmon fillets)

Handful basil leaves

Preheat the oven to 220°C / 425°F / Gas mark 7.

Using an oven proof dish, tip in the potatoes and 1 tablespoon of olive oil then roast the potatoes for 20 minutes until they start to brown.

Toss the asparagus in with the potatoes, then return to the oven for 15 minutes.

Add the cherry tomatoes and vinegar and nestle the salmon over the vegetables.

Drizzle with the remaining oil and return to the oven for a final 10-15 minutes until the salmon is cooked.

Scatter over the basil leaves and serve.
