Now that the sun is making its first real attempt to shine, the flip flops have been retrieved from the back of the wardrobe and my better half has dusted down the outdoor furniture in preparation for BBQ season!
 
I’ve made a new discovery at Lidl..... Tapas!  There is literally nothing better to enjoy when you get in from work and catch the last hours of sunshine in the back garden.  Even easier than a BBQ and quicker!
 
I’ve also discovered that Lidl has a bakery section and is literally impossible to pass it by!  The smell of freshly baked loaves, scones, croissants and cookies is completely irresistible.  My new favourite thing in Lidl is the brown multiseed loaf which you can run through their slicing machine.  It’s divine.  The seeds run right through the bread and are not just sprinkled on top.  Perfect for sandwiches or dipped in hummus!  And because it’s brown, there’s no guilt.
 
Continuing the theme of real value, I have got lunch for the week for €9 - yes!  I picked up some wraps, ham, cherry tomatoes, gouda cheese and coleslaw.  To supplement this, I also bought some fat free yoghurts (8 tubs for €1.99).  My working lunch covered for the week and it was delicious.
 
This weekend we are having Mexican night and cooking chicken fajitas!  Lidl do their own fajita kit for €1.59 (which is excellent value compared with the equivalent fajita kit which is €4.95 in other supermarkets).  This includes 8 tortilla wraps, salsa sauce and seasoning.  It is so simple to make and a real crowd pleaser in our house.  I add 3 large Irish chicken breasts (just €3.45!), a red pepper sliced, mushrooms, red onion and then add the sauce and cook through.  Then we serve this in the middle of the table along with some bowls of sour cream, grated cheese and guacamole and let everyone help themselves!
