Lidl Full Shop - The Haugh Family - Week 3

Having batch cooked some of my meals using Lidl purchases from the last two weeks I was able to shop very economically this week. In keeping with my batch-cooking way of life for this busy working mum, I bought an extra large tray of chicken fillets, two jars of Kanpur Garden Korma Cooking Sauce, and a trio of fresh peppers to make one of our family favourites! By bulking up the dish with the finely copped peppers, I not only get to sneak some healthy vegetables into my children's diet but it allows me to get two family meals from the ingredients. I pair the Indian Korma with basmati rice, where I also batch cook enough for two meals and freeze half.
 
 
My second freshly made meal of the week was a zesty haddock recipe with crushed potatoes and peas. I was inspired by the excellent value on the fresh fish in-store with a packet of Inismara haddock fillets retailing at a discounted €2, so I bought two packets to feed the whole family. This recipe is effortless and healthy too. I simply placed the haddock into some tin foil, squeezed some fresh lemon over the fillets, added a few knobs of butter and seasoned with a little freshly ground black pepper. I sealed up the foil package by scrunching the edges and placed into the oven for 25 mins. I then boiled a packet of baby potatoes and frozen petit pois while the fish cooked. When ready I crushed the baby potatoes with a fork and added the peas and a little more butter. Easy peasy!
 
 
I cannot get over the value to be had in the Lidl biscuit and cracker range. A large packet of Rich Tea biscuits, my low fat favourite, were just 28 cent. While a supersize packet of cream crackers, my daughter’s favourite lunchbox filler, are just 39 cent. We try to encourage lots of water drinking in our house rather than juices and I have found by buying small bottles and keeping them in the fridge, they are easy to grab for car journeys and school lunches. The 6-pack of 330ml water bottles at just €1.29 is a mere fraction of what I had been paying for branded bottled water, saving me a significant sum this week.
