 Black bean quesadilla
Black beans are high in fibre and antioxidants making them a healthy choice for dinner and these quesadillas are great if you are in a hurry.
 

1 tsp olive oil

4 large mushrooms, sliced

100g black beans, rinsed

150g Mozzarella cheese, grated

4 flour tortillas

Guacamole , sliced tomatoes and red onion to garnish

Heat the oil in a saucepan over a medium heat. Gently cook the mushrooms for about 3 minutes. Remove and set aside. Reduce the heat but don’t turn it off.

Combine the beans, cheese and mushrooms together in a small bowl.

Divide the bean mix between the 4 tortillas and spoon onto one side of the tortilla. Fold it in half and press down slightly with your hand – don’t squash it.

Place the filled tortillas onto the pan that you cooked the mushrooms on and increase the heat slightly.

Cook on each side for about 3 minutes until hard.

Serve with the guacamole and salad.

You can add meat as an alternative to beans but make sure you cook the meat fully before putting onto the tortilla.
