Tian of crab with avocado and red onion salsa
This is a lovely easy starter which looks good on a plate.

For the crab :
225g white crab meat
2 tbsp mayonnaise (readymade is fine)
Freshly ground black pepper
For the avocado and red onion salsa:
2 avocados, diced
1 red onion, peeled and finely diced
1 red chilli, chopped finely
1/2 tsp fresh coriander - chopped finely
A little virgin olive oil
For the garnish:
2 cherry tomatoes, halved
A little balsamic vinegar
Flat-leaf parsley and chives

For the crab: mix all the ingredients together in a bowl. For the avocado and red onion salsa: mix all the ingredients together in a separate bowl.

To serve, place a tian, pastry cutter or something similar in the centre of a serving plate.

Put a quarter of the crab meat mixture into it and top this off with a quarter of the avocado and red onion salsa.

Remove the tian and repeat the process for the other 3 plates.

Place one half of the cherry tomato on each plate, drizzle a little balsamic vinegar over and garnish with the fresh herbs.
