Boost metabolism and get your fat-burning kick-started.
X2 Moy Park chicken breasts – thinly flattened out
Juice and zest of 1 lime
Small handful of fresh coriander
1 red chilli – deseeded and finely diced
2 eggs
Splash of lemon juice
1 avocado
2 slices / wedges of good crusty bread
1 good vine tomato – halved and grilled
2 tablespoons of pumpkin seeds
Splash of tabasco
Marinate the chicken breasts (ensuring they are as flat as possible) for 10 minutes in the lime juice and zest, coriander and chilli.
Bring a pan of water to just below the boil, and add a splash of lemon juice, swirl the water and drop in the eggs and poach - keep them nice and runny in the middle – poaching for 3 1/2 to 4 minutes should do the trick!
Slice the avocado in half, and then chop into slices.
On a hot chargrill pan, sear the chicken breasts until they are cooked through.
Once cooked, let them rest. While the chicken breasts are resting, sear the two slices / wedges of bread in the same pan until charred and toasty, and grill the tomato.
On your plates, build the dish by starting with the charred bread, followed by the seared chicken, avocado slices, grilled tomato and finally the poached egg.
Finish with a sprinkling of the seeds and a splash of the Tabasco sauce.
