Apple oatmeal cookies

10g butter, softened

175g honey

1 egg

1 teaspoon vanilla extract

90g stoneground wholemeal flour

1/2 teaspoon bicarbonate of soda

3/4 teaspoon ground cinnamon

125g porridge oats

1 apple, cored and chopped

Preheat the oven to 190°C / 375°F /Gas mark 5. Line baking tray with greaseproof paper.

Cream the butter, honey, egg and vanilla together in a bowl until smooth.

In a seperate bowl, mix together the wholemeal flour, bicarbonate of soda and cinnamon and then stir into the honey and egg mixture.

Stir in the oats and apple and then use a teaspoon to transfer the mixture onto a baking tray.

Bake for 8 to 10 minutes until firm and golden. 

Transfer to a wire rack to cool fully before serving.
