A honey-mustard dressing turns these baby turnips into a wonderful side dish.
150g baby turnips, peeled
1tbsp vinegar
1tsp honey
1/2tsp mustard powder
1tbsp olive oil
1tbsp chopped flat leaf parsley
1tbsp shredded mint
Black pepper
Put the turnips into a saucepan. Pour a large amount of water over the turnips, a pinch of salt and bring to the boil. Simmer on low heat until the turnips become tender, which should take about 8 to 10 minutes.
In the meantime, pour the vinegar, the honey and the mustard powder into a small bowl. Season generously with salt and pepper and quickly whisk until the dressing is smooth. Set aside.
Use a colander to drain the turnips completely. Heat the olive oil in a small frying pan then add the turnips. Cook them for a few minutes until they are golden. Pour the honey dressing and stir well. The turnips are ready when small bubbles appear in the glaze.
Mix in the herbs and then place the turnips on a serving dish. Pour the glaze over and serve right away.
