Baby vegetable stock

1 onion, peeled and quartered
2 carrot, peeled and diced
2 sticks celery sliced
1 leak sliced
1.5 litres cold water
Put all the ingredients into a saucepan, bring to the boil then lower the heat, cover and simmer for 1 hour
Strain the stock into a bowl/jug, cover and leave to cool. Store in the fridge and use within 24hours or freeze portions for use at a later date.
